Meal prepping is not something I normally do, but I decided to try it this week. Not only does it enforce a healthier diet, but it is always convenient for those on the go (aka yours truly).
All of the ingredients are from Trader Joes, and I tried to make the meals healthy yet yummy.

I steamed my chicken breasts with Himalayan Sea Salt and lemon
The Himalayan Sea Salt and the lemon (right) are the ingredients I used to season my chicken breasts. The Earth Balance Butter (left) is my ride-or-die when sautéing and flavoring. I used this to sauté my Portabella mushrooms and to flavor my green beans and rice. It is great if you are vegan or just watching your dairy intake!
Here are the finished results. I made five meals, and this will last me the whole week for work.
The two on the left are my take on a burrito bowl. There is brown rice, grilled chicken, and sautéed peppers and onions. In the morning I would quickly add cheese and slice avocado and I am set!
The three furthest to the right are my chicken veggie bowls. They each have brown rice, grilled chicken, green beans and portabella mushrooms.
These meals took only one hour to make in total!
I felt incredibly productive I will say. Normally my lunches are lacking nutritional ingredients or I skip my lunch all together. I now have all of my lunches prepared, and they will keep me full and energized.
I have been really trying to take active steps in becoming a healthier individual, and creating a more grounded lifestyle.
This small but meaningful accomplishment is one step closer to doing so!
